Uses
<p>Roots are cooked in curries, sambars, parathas and pickles or eaten raw in salads; the vitamin-rich greens are sauteed like spinach. A staple winter root for everyday Indian home cooking.</p>
Growing tips
<p>Direct sow seeds 1-1.5 cm deep, spacing rows 20-25 cm apart and thinning plants to 8-10 cm. Seeds germinate quickly in 3-7 days in cool weather. Keep the soil consistently moist and loose so roots swell evenly. Harvest when roots reach 5-8 cm across, usually 40-60 days after sowing; smaller roots are sweeter and more tender. Avoid letting them over-mature or they turn woody and pungent.</p>
