Uses

Tender young fruits are sautéed, grilled, stuffed or added to curries, soups and stir-fries. The bright squash blossoms can be battered and fried as a delicacy. Best harvested young when the skin is still soft.

Growing tips

Sow seeds 2-3 cm deep directly where they are to grow, two to three per hill, thinning to the strongest, with hills 60-90 cm apart. Germination takes 7-14 days in warm soil (21-32°C). Hand-pollinate in the early morning if bees are scarce. Pick fruits young (10-20 cm) and often, starting about 45-60 days from sowing, to keep the plant producing. Mulch to conserve moisture and water at the base to avoid powdery mildew.

Frequently asked questions

When is the best time to sow squash seeds in India?
Sow from February to June for the summer season, and in many regions again after the monsoon. Squash needs warm soil of 21-32°C and will not germinate in cold weather.
Can squash be grown in containers?
Yes, choose a bush variety and a large pot of at least 16-18 inches with rich, well-drained mix. Keep it in full sun, water consistently, and feed during fruiting for a good harvest.
