Uses
<p>Cooked into palak paneer, dal palak, saag and curries, or used fresh in salads, smoothies and parathas. A staple iron- and vitamin-rich green for everyday Indian cooking, harvested young and tender.</p>
Growing tips
<p>Direct-sow seeds 1-2 cm deep in rows, thinning seedlings to 8-10 cm apart. Germination takes 7-14 days in cool soil (15-25°C); soaking seed overnight speeds it up. Keep moisture steady to prevent bolting. First leaves are ready in 30-45 days; harvest outer leaves or cut the whole rosette 3-4 cm above soil for regrowth. Sow in succession every 2-3 weeks through winter for a continuous supply. Warm weather makes plants bolt, so grow mainly in the cool season in the plains.</p>
