Uses

<p>The peppery leaves season <strong>beans, lentils, soups, stews and grilled vegetables</strong>, and pair especially well with pulses, where they ease digestion. Savory is also used fresh or dried in herb blends and herbal infusions.</p>

Growing tips

<p>Surface sow or barely cover the fine seeds with 2-3 mm of soil as they need light to germinate; keep at 18-22°C. Germination takes 10-21 days. Thin or transplant seedlings to 20-25 cm apart in full sun. Pinch tips to keep the plant bushy and harvest leaves just before flowering for the best flavour, about 60-70 days after sowing.</p>

Sow summer savory from October to February in the plains, when the weather is mild, and in spring in cooler hill regions. It germinates best in moderate warmth, so avoid both peak summer heat and the wettest monsoon weeks.
Can savory be grown in pots?
Yes, savory is compact and well suited to pots and window boxes. Use a container at least 15-20 cm wide with light, well-drained soil, place in full sun, and water moderately.
