Rosemary (Salvia rosmarinus, formerly Rosmarinus officinalis) is a fragrant evergreen Mediterranean shrub with needle-like aromatic leaves used to flavour roasts, breads, potatoes and grilled dishes. It forms an upright or trailing woody bush and bears small blue flowers loved by bees. Tough and drought-tolerant once established, rosemary thrives in full sun and gritty, sharply-drained soil and strongly dislikes wet roots. It grows well in pots and sunny beds across much of India but needs protection from heavy monsoon waterlogging and high humidity. With bright light, restrained watering and occasional light trimming, a single plant supplies aromatic sprigs for the kitchen year-round.
