<p>The ripe fruit is cooked as <strong>sabzi, halwa, sambar, soup and petha</strong>, while the young leaves, shoots and flowers are also eaten. Seeds can be roasted as a snack. A productive, long-storing vegetable for the home kitchen garden.</p>

Growing tips

<p>Direct sow seeds 2-3 cm deep, two or three to a pit, on raised mounds spaced 1-1.5 m apart; thin to the strongest seedling. Germination takes 7-10 days in warm soil. Give the vine a strong trellis or open ground to ramble. Hand-pollinate flowers in the early morning if fruit set is poor. Fruits are ready about 100-120 days after sowing, when the skin hardens and the stem dries.</p>
