The Pistachio (Pistacia vera) is a small, slow-growing deciduous tree grown for its prized green, edible nuts (pista). It has a spreading, gnarled habit with compound leaves and inconspicuous flowers, the female trees bearing clusters of reddish husked nuts that split open at maturity. As a crop it demands a very specific climate: long, hot, dry summers to ripen the nuts and cold winters to satisfy its chilling requirement, conditions found in the cooler arid belts of north and north-west India.
Drought-tolerant and adapted to poor, calcareous and slightly saline soils once established, it is also planted as a hardy ornamental in dry-climate gardens. Trees are dioecious, so both male and female plants are needed for nut production.

Soak the seeds in water for 24-48 hours, then cold-stratify them in damp sand for 4-6 weeks to break dormancy. Sow about 2-3 cm deep in a deep, sandy, free-draining mix kept warm after stratification; germination typically takes 2-3 weeks. Grow seedlings in deep pots to protect the long taproot and transplant young; budding of named varieties onto seedling rootstock is used for orchards.
