Uses

The fresh leaves are used as a garnish and flavouring in soups, salads, pastas, sauces and continental cooking, and are rich in vitamins A, C and K. Chopped parsley also freshens breath and is a handy cut-and-come-again kitchen herb.

Growing tips

Sow seeds about 1 cm deep; germination is slow and erratic, so soak seeds overnight before sowing to speed it up. Germination takes 18-28 days. Thin or transplant seedlings to 15-20 cm apart once they have a few true leaves. Keep the soil moist and pick outer stems first. Leaf harvest begins about 70-80 days after sowing and continues for months.
