Uses
<p>Tender leaves make the classic Punjabi <em>sarson ka saag</em>, stir-fries and pakoras; mature plants yield mustard seeds for tempering and oil. The microgreens are a peppery salad garnish.</p>
Growing tips
<p>Direct sow seeds 1 cm deep, spacing rows 15-20 cm apart; thin seedlings to 8-10 cm. Germination takes <strong>3-7 days</strong>. No transplanting needed. Harvest tender leaves from <strong>25-40 days</strong>; leave plants to flower and dry for seed at 90-110 days. Sow successionally every 2 weeks through winter for a steady supply.</p>
