Uses

Leaves are eaten in salads, smoothies, sabzis, soups and baked into crisps; rich in vitamins A, C, K, calcium and antioxidants. Cooler weather makes the leaves sweeter and more tender.

Growing tips

Sow seeds 0.5-1 cm deep in trays or directly, transplanting seedlings 40-45 cm apart once they have 4-5 true leaves. Germination takes 5-10 days at 15-25°C. Start the first harvest of outer leaves about 55-65 days after sowing and keep picking from the bottom up; the central rosette stays productive for several months in cool weather.
