Uses
<p>The tangy fruit is sun-dried and powdered as a souring agent and natural meat tenderiser in Rajasthani cooking, used in sabzis, chutneys and the famous <em>ker-sangri</em>. Tender green fruits are also eaten fresh or cooked.</p>
Growing tips
<p>Sow seeds <strong>2-3 cm deep</strong> directly where the vine will grow, spacing plants 60-90 cm apart as it spreads widely. Germination takes about 7-12 days in warm soil (25-35°C). Being a heat-lover, direct sowing avoids transplant shock. Vines start fruiting in roughly 55-70 days; pick fruits young and tender for cooking or let them ripen and dry for powder.</p>
