Uses
<p>Young leaves are eaten fresh in <strong>salads</strong> or lightly cooked; the bitterness mellows with blanching. Roasted chicory <em>root</em> is a well-known coffee substitute and the plant is also valued in traditional medicine for the liver and digestion.</p>
Growing tips
<p>Sow seeds <strong>1 cm deep</strong>, directly in beds or in trays. Seeds <strong>germinate in 7-14 days</strong>. Thin or transplant to <strong>20-25 cm apart</strong>. Harvest outer leaves continuously once plants are established, about <strong>50-60 days from sowing</strong>; for blanched chicons, cover the crowns to reduce bitterness. Roots for coffee are lifted when mature.</p>
