Uses

Young leaves are eaten fresh in salads or lightly cooked; the bitterness mellows with blanching. Roasted chicory root is a well-known coffee substitute and the plant is also valued in traditional medicine for the liver and digestion.

Growing tips

Sow seeds 1 cm deep, directly in beds or in trays. Seeds germinate in 7-14 days. Thin or transplant to 20-25 cm apart. Harvest outer leaves continuously once plants are established, about 50-60 days from sowing; for blanched chicons, cover the crowns to reduce bitterness. Roots for coffee are lifted when mature.

Frequently asked questions

When should chicory seeds be sown in India?
Sow in the cool season, roughly September to December across most of India. Chicory grows best in mild winter temperatures and may bolt quickly in summer heat.
Can I grow chicory in containers?
Yes. Use a deep pot of at least 8-10 inches so the roots have room. Give it sun to part shade and steady moisture for tender, less-bitter leaves.
