Uses
<p>Endlessly versatile in Indian cooking: <strong>baingan bharta, bharwa baingan, sambar, curries and fritters</strong>. Different varieties suit roasting, stuffing or frying.</p>
Growing tips
<p>Sow seeds 0.5-1 cm deep in seed trays or pots. Germination takes <strong>8-14 days</strong> in warm weather. Transplant seedlings when they have 4-5 true leaves and are about 10-12 cm tall, spacing plants 45-60 cm apart. Stake taller varieties to prevent toppling under fruit load. First harvest comes about <strong>60-80 days</strong> after transplant; pick fruit while skin is glossy and firm, and keep picking to prolong production.</p>
