Uses
<p>Roots are eaten <strong>raw in salads</strong>, juiced, pickled, roasted or cooked in curries; the young leaves make a nutritious cooked green. Beetroot is valued for its natural colour, iron and antioxidants.</p>
Growing tips
<p>Soak seeds overnight, then sow <strong>1.5-2 cm deep</strong> directly where they will grow. Space rows 25 cm apart and thin seedlings to <strong>8-10 cm apart</strong> (each seed ball gives several plants). Germination takes <strong>7-14 days</strong>. Use a pot at least 25 cm deep. Roots are ready to harvest in about <strong>55-70 days</strong> when 4-6 cm across.</p>
