Uses

A prized culinary leafy green used in bathua saag, raita, parathas, dal and kadhi across North India. Highly nutritious and valued in traditional diets for digestion and iron content.

Growing tips

Sow seeds thinly about 5-10 mm deep directly in the bed or pot. Germination is quick, in 5-10 days. Thin seedlings to 15-20 cm apart. No transplanting needed. Begin harvesting tender leaves and shoots from about 30-40 days; repeated cut-and-come-again picking extends the harvest through winter.
