Uses

The tender young cobs are eaten whole in stir-fries, manchurian, soups, salads, pickles and curries. A popular crisp, sweet vegetable in Indo-Chinese and continental home cooking.

Growing tips

Sow seeds 2-3 cm deep, spacing plants 15-20 cm apart; plant in a block of several short rows rather than one long row for good cob formation. Germination takes 6-10 days in warm soil. Direct sow as corn dislikes transplanting. Harvest cobs young, just 45-60 days after sowing, when the silks just emerge and before pollination, picking every 1-2 days for tenderness.
