<p>The tender young cobs are eaten whole in stir-fries, manchurian, soups, salads, pickles and curries. A popular crisp, sweet vegetable in Indo-Chinese and continental home cooking.</p>

Growing tips

<p>Sow seeds <strong>2-3 cm deep</strong>, spacing plants 15-20 cm apart; plant in a block of several short rows rather than one long row for good cob formation. Germination takes <strong>6-10 days</strong> in warm soil. Direct sow as corn dislikes transplanting. Harvest cobs young, just <strong>45-60 days</strong> after sowing, when the silks just emerge and before pollination, picking every 1-2 days for tenderness.</p>

When should I sow baby corn seeds in India?
Baby corn is a warm-season crop. Sow from February to March and again from June to August with the monsoon in most of India. It germinates best in warm soil and can be grown nearly year-round in frost-free areas.
When do I pick baby corn cobs?
Harvest the cobs very young, usually 45 to 60 days after sowing, just as the silky threads emerge from the tip and before the kernels are pollinated. Picking early keeps them tender, sweet and crisp.
