Uses

The young spears are a prized vegetable, eaten steamed, grilled, roasted or in soups and salads. The mature ferny foliage is also used decoratively in floral arrangements.

Growing tips

Soak seeds for a day, then sow 1.5-2 cm deep in trays; germination is slow at 14-28 days. Transplant seedlings to a permanent deep bed at 30-45 cm spacing after a few months. Do not harvest in the first 1-2 years to let crowns build strength; from the third spring, cut spears for 6-8 weeks when they reach 15-20 cm. Let remaining spears fern out to feed the crown.
