Uses

A gourmet culinary vegetable: the immature flower buds are steamed, boiled or grilled and the fleshy bracts and heart eaten. The bold silvery foliage also makes it a handsome ornamental and back-of-border accent.

Growing tips

Sow seeds about 1-1.5 cm deep in seed trays; germination takes 14-21 days at 20-25°C. Transplant strong seedlings 75-90 cm apart in deep rich soil or very large pots. A cool spell helps trigger budding. Harvest the firm, plump buds before the scales open, usually from 90-150 days after transplanting; the plant can crop again in following years.
