Uses

A culinary leafy vegetable cooked as saag, stir-fry, dal and curries. Both green and red-leaved types are rich in iron, calcium and vitamins, and tender young leaves can also be added to salads.

Growing tips

Direct-sow the fine seeds about 0.5 cm deep, or broadcast thinly and cover lightly. Germination is quick at 4-7 days in warm weather. Thin or transplant to 10-15 cm spacing. Harvest whole young plants or snip outer leaves from 25-30 days; for cut-and-come-again, cut above the lowest leaves and the plant resprouts repeatedly.
