Uses

<p>Young leaves are eaten raw in salads, blended into sorrel soup, or cooked like spinach with a tangy twist. The lemony flavour also brightens sauces, dals and fish dishes. Best used fresh and picked young before the flavour turns sharp.</p>

Growing tips

<p>Direct-sow or sow in trays 1 cm deep, thinning or transplanting to 25-30 cm apart. Germination takes 7-14 days at 15-25°C. Keep soil moist and pick outer leaves regularly from about 50-60 days; cut-and-come-again harvesting keeps plants productive. Remove flower stalks promptly to stop the leaves turning bitter and to extend the harvest. In the plains, grow as a winter crop; in hills it can crop for much of the year.</p>

When should sorrel be sown in India?
Sow in autumn to winter (October-January) across the plains for a cool-season crop. In hill stations with mild summers you can also sow in spring for a longer harvest.
Can I grow sorrel in a container on my balcony?
Yes. A 8-10 inch pot with rich, moisture-retentive mix is ideal. Keep it well-watered, in morning sun, and pick outer leaves regularly for a steady supply.
