<p>Fennel seeds (saunf) are a classic Indian after-meal mouth freshener and a spice in pickles, sweets and masalas, valued as a digestive. The feathery leaves flavour salads and fish, the tender bulb of Florence fennel is eaten as a vegetable, and the herb features in many traditional remedies.</p>

Growing tips

<p>Fennel dislikes root disturbance, so direct sow seeds <strong>5-10 mm deep</strong> in their final deep pot or bed. Germination takes around <strong>7-14 days</strong>. Thin seedlings to 25-30 cm apart. Snip leaves from about 50-60 days; for seeds (saunf), let plants flower and harvest the dried umbels roughly <strong>90-110 days</strong> after sowing. Keep it away from coriander and dill to avoid cross-issues.</p>

When should I sow Fennel seeds in India?
Sow in the cool season from October to December across the plains and in spring in the hills. Fennel grows best in cool weather and tends to bolt prematurely in summer heat.
Can I grow Fennel in a container to get saunf seeds?
Yes, use a deep pot or grow-bag of at least 12 inches to accommodate its taproot. Let a few plants flower fully and dry on the plant, then collect the seed heads for your own saunf.
